I am sold on have a counter mount tap. I see that built-ins are obviously more expensive than stand alones, but can I just install a stand alone in the cabinetry and put a register grating on the back panel (at the front of the bar at people's feet) to provide aplace for the heat to go? Maybe make that a detachable panel to change tanks IF the tanks are externally mounted?

    Thanks

Yes, there is nothing wrong with doing that. In fact, it would allow the unit to breath better & the full removable panel would allow you access to clean the condenser coils periodically.
