Default GLASS VS PLASTIC (LEXAN)

WHY IS IT THAT WHEN I DISPENSE IN A GLASS MUG, THE FOAM IS VERY FROTHY AND REMAINS LONGER THAN WHEN I DISPENSE INTO LEXAN PITCHERS?

I USE 30 & 60 OUNCE LEXAN PITCHERS AND GLASS MUGS.

I HAVE NOTICED QUITE A MEASUREABLE DIFFERENCE BETWEEN THE 2 TYPES OF VESSELS.

IS THIS A COMMON OCCURRENCE, OR IS THERE SOME REMEDY FOR THIS? (I AM SURE THAT MY CUSTOMERS PREFER THE FOAM TO REMAIN LONGER)

Lexan pitchers have a more porous surface than a glass mug. Particularly pitchers that have been in use for some time. Normally what takes place after dispensing is the CO2 is boiling out of the beer due to its reaction to the surface defects and the impurities / contamination they hold. This boiling results in a thick creamy froth but leaves behind flat beer.

Another issue is how they are cleaned. The detergent, disinfectant, brushes and other drink glassware cleaned in the same sink all have an impact on how friendly the glassware is to the beer.

Glass has always been preferably over lexan. Unfortunately, it is also very heavy.
