Default Should pressure drop when drawing beer?

First of all, thanks to everyone who posts helpful advice on this forum. I just had my first co2 tank draining disaster (bought a 5# tank on friday, it was gone by sunday), and got a new tank today and want to make sure it doesn't happen again. Made sure everything was tight, put in a new washer, leak tested everywhere there was a connection: can't find any problems.

But in keeping an eye on the regulator over the evening, I noticed that it was going down when a beer was poured. I had it set at 12 and you could definitely see it dip below that line over the course of a beer being poured. I was wondering if this was normal, if it should go back up to twelve eventually once it had been poured. Any advice/reassurance would be appreciated
