Nitro pressure clarification

Hi All,

I am new to the forum and to draft beer. I recently picked up a used Beverage Air DD68C used, replaced the draft towers and all internal plumbing, and now have four taps from two towers(two Co2 and two nitro taps with the stout faucet).

St. Paddy's was the first-run of the reconditioned kegerator. I got a keg of Chimay Triple for the Co2 and a keg of a local stout (I live in Oregon, so there is a plethora of beers to choose from) for the nitro tap.

My question is on the ranges of suggested pressures for the nitro beer. I got a local welding company to fill up a tank with 75% nitrogen and 25% Co2. I've read the "dispense pressure" for stout/Guinness-type beers is 30-40 psi. Does this mean the pressure I need to set the regulator at is between 30-40, OR does that mean the combined pressure of what was already in the keg I got it PLUS what I am adding with the new gas needs to add to 30-40?

I assumed this meant I needed to set the regulator at 30-40. Currently, it is at 32 and the stout comes out good, but there is a lot of head (2-inches or so in a 20-oz pint). I am thinking I may need to scale back the pressure from the regulator. The beer tastes fine and it is rich and creamy, but I want to make sure I am doing it correctly. I also recognize each stout is probably a little different.

30 to 40 PSIG to the keg is correct. Be certain that the gas company is correctly filling the cylinder with the correct mix.

also make sure they are useing food grade gases
