It's impossible to over carb beer that isn't hooked up to co2. Bleeding off head pressure will do nothing more than allow the co2 in the beer to exit the beer.
Try to let them settle for a good hour before dispensing, and you should be fine. If you're dispensing right away, then you're probably going to have foam. Sure you can bleed off some co2 and maybe avoid that, but do you want to serve flat beer?

Sometimes when I reflect back on all the beer I drink I feel ashamed.
Then I look into the glass and think about the workers in the brewery
and all of their hopes and dreams. If I didn't drink this beer, they might
be out of work and their dreams would be shattered. Then I say to myself,
"It is better that I drink this beer and let their dreams come true than
be selfish and worry about my liver."
