Default Are all stouts kegged with Nitrogen?

I recently visited Shenandoah Brewing Company and made an Imperial Stout. For those of you that don't know this is a brewpub that lets you brew your own beer.

In 4 weeks or so I go to keg & bottle the beer. I sent an e-mail to them to ask if they keg the beer with nitrogen, but curious if ALL stouts should be kegged with Nitrogen?

If they keg with Co2, can I bring it home and dispense with Nitrogen/Co2 mix without issues?
I know some homebrew people keg with CO2 then attach to beergas mix (75/25) and let it sit for a few days before dispense and say the carbonation/head should be all good.

Any ideas?
