Default faucet question - cmb-x1

I purchased a few years ago the cmb-x1 beer faucet and I'm curious as to what the little knob on the side of it does. I haven't actually hooked the faucet up yet...still working on it...but after looking at i can't figure it out. It also has a gry plastic tapered insert into the shank and the inside of the shank is tapered as well...is this normal or does all of this allow for a creamy dense pour?

This is a flow control faucet. These were very popular decades ago and disappeared due to foam issues. European systems have used them extensively.

Normally the system will be under restricted and then the flow is regulated with the knob. Personnally I think they are a waste of money and effort. Set up your system using a conventional faucet and balance temperature / pressure / restriction correctly and you will have very few issues.
