Default sub zero conversion?

Hi,
we inherited a small sub zero, model 249RP, and I wonder if I will have any problems converting it. We want to put a double tap in the top, and fit two 5 gallon kegs inside. The kegs just fit, leaving about 1' clearance to the "ceiling" of the fridge. The top wall of the unit is about 2.25" thick. We will be putting the fridge in a bar that will have a poured concrete top.

1. is there any wiring to worry about or can I just cut away through the top?
2. will that be enough clearance to attach the tower and get the lines to the kegs?
