Default Kegerator Newbie - Between servings...

What do I have to keep running? I have a 5-lb CO2 canister hooked up to 2 sixtels (IPA and Imperial Amber) by American Sankey couplers. I'm wondering what I have to keep active to keep the beer fresh and ensure a good tapped product time after time. The kegs are stored at 38 degrees and the CO2 is set at 12 PSI.

1. Do I have to keep the CO2 'in' line active (as in sending CO2 to the coupler) and/or the Sankey coupler in the active (handle down) position?
2. Can I turn either or both off for a day or two? If so, for how long?

Also a side question, I have a small leak at the shank/beer line connection. The connection is a 'hand twist' (and as tight as I can go with my hands) and I've applied teflon tape to the shank. I didn't think the tape would make a big difference but its already shut down the leak on the other line.

Keep the co2 applied and the coupler engaged at all times. Replace the washer that's leaking.

Thank you Bard. I just pushed down the coupler handles and opened the gas lines. I'll check on the washer later today. Thanks for the help.

As a follow-up, the system was lacking washers between the shank and the beer nut. They were conveniently tucked in the bag that the store said was 'exclusively for the corny keg'. The problem is fixed!
