This sounds like a direct draw system. Follow Draught Prophets recommendation and as you discuss the specifics of your system needs, be certain to include the following:
Since you will need nitrogen for the wine you might as well set the beer system up to use a
gas blender. The blender requires a source of nitrogen and CO2. The pressure to the kegs @ 22 PSIG for your ale and lagers will overcome issues which exist with the use of 100% CO2.
Simply install approx. 14 ft. of 3/16" vinyl on one line and trim back in six inch increments until you acquire the flow speed (128 oz./min. or slower) desired. Then build the other lines the same less nitrogenated lines. You will never have issues with moderate temperature fluctuations or with over carbonation. You will also dispense and serve product to your customers with the correct gas content - unlike the pre -mixed crap that the gas companies push.
If you will dispense nitrogenated beer, install a
dual blender and five feet of 3/16 with 30 to 35 PSIG to the keg. You will be a happy camper. If you choose to go the neanderthal route of dispensing (100% CO2 or pre-mixed gas), good luck!
One last suggestion - build a
shadow box around your shanks in the wall to assure constant temperature. Use a small blower with flex tube and route cold air into this box.
If the installer does not agree with the above, find someone who does.
