Yes the cold plate will work if it's stainless ( otherwise in will have bad tastes)but do you really want your wine that cold? You will need nitrogen if you don't want sparkling wine. You will have the added cost of a nitrigen regulator and set the pressure to 3-4 lbs. Make sure you use a plastic wine faucet or a stainless steel faucet. Line length is not an issue. Commercial keg wines use a sankey coupler and you can use a cornellius keg (old soda tank) for your homemade wine.
