Your CO2 level needs to be a little higher than 7-10, I would bump it up to 14lbs if your beer (liquid temp) is 38 degrees. What happens at 7-10 pounds is that the CO2 will leach out of the beer over time and equalize at a lower carbonation level. Two weeks is certainly enough time for that to happen. As far as the denser/stronger perception that could certainly be attributed to undercarbonated beer. CO2 gives the effect of a ligther mouthfeel and a lighter body so without it it will naturally see stronger, or at the very least different. I see this all the time judging homebrew. It's hard, you have a fantastic beer with no carbonation and it just ruins it. Good luck.
