Default My Carling Keg is Flat? Help

New to this so I hope someone can help...
I setup my first keg of carling on saturday and poured around 20 pints that night at a psi of around 6 (not sure if this is correct?) the pints seemed to be a little foamy.....
However that night the gas bottle was turned off and the preasure overnight had all been lost, now when I pour the pint I get a comnpletly flat one.
Can I recover this? I have turned on the pressure up to 35psi and gave the barrel a shake and left it like that overnight. As I have read I can force carbonate the larger easy enough again.

Is this correct and if so how long will this take at this pressure?

Also I have a knob at the bottom of my beer pump on the line, is this the flow restricter?
