Guinness is dispensed completely different from ales and lagers. Four to five feet of 3/16" should be fine and adjust the pressure starting at 28 up to 40 PSIG based on the dispense you desire. No need to vary pressure due to temperature changes.

Be certain to use a stout faucet for dispensing.
