The reason the temp goes up is because ice is a good insulator. For one reason or another there is not enough defrost time. You did not give make & model so I can only give probable causes. If the temp control is set too cold the compressor will run all the time & that might be one reason for the ice. The door gasket may not be sealing properly allowing moisture to be pulled in from outside. The defrost timer might not be working. One simple solution might be to get a small timer from someplace like Home Depot & plug the unit into that. Set the timer to shut the unit off in the middle of the night for about an hour. You might need to fiddle with the timer to get the desired effect i.e. more or less time & two or more times a day.
