Depends what you're serving. In general the range I've seen recommended here and elsewhere is 36-40F again depending on the specific brew. I do mostly micros so I have mine in the 38-40F zone, usually nearer 40F.

How cold is your fridge? Is there an uncooled tower or faucet involved? This is common source of foaming.
