The FDA restricts the use of brass in low PH application (beer and wine). Stainless is the alternative which is acceptable. Here is the catch though; they have no way to enforce this, they are working on one but for now (in most states) they are doing nothing about this. That being said you could technically use them in commercial applications but when the time comes you will need to upgrade. My philosophy is to just do it now and be done with it. I have some accounts that ask me for the brass and I will get them for them but I always default to the stainless. Stainless is definitely worth it with regards to quality as they inhibit microbiological growth which is key if draft beer dispensing. The problem with the brass is that the low PH liquids leach out something which has been linked to breast cancer.
